We are delighted to invite you to an extraordinary Champagne dinner hosted by Hubert de Billy, 5th-generation member of the founding family of Champagne Pol Roger at Table by Sandy Keung.

This exclusive evening centers around the philosophy of the Vinothèque—Pol Roger’s rare library of late-disgorged, extended-aged cuvées. Kept undisturbed in the house's deep, cool chalk cellars in Épernay, these wines undergo prolonged lees contact to achieve unmatched complexity, silkiness, and aromatic depth while preserving vibrant freshness.

Guided personally by Hubert de Billy, guests will experience the art of time and patient maturation through a bespoke multi-course pairing menu designed to highlight these historical vintages.
