Chevrot

Located at the southern gateway to the Côte de Beaune, the 20 ha vineyard produces 15 Appellations d'Origine Contrôlée. The terroir is clay-limestone mainly located on outcrops dating from the Upper Triassic (-230 to -195 million years) and the Lower Jurassic (-195 to -175 million years).

The vines are 30 years old on average, the oldest vine planted by the Grandfather 75 years ago testifies to the care given to viticulture both in terms of controlling yields and respecting the terroir (soil maintenance and protection of the integrated vineyard).

Pablo and Vincent CHEVROT have respect for the land and nature.

They seek to produce wines that are faithful to their terroir, translating through all the qualities of the environment in which the vines grow (geology, pedology, ecosystem, hydrology, altitude, slope, exposure).

Banning all synthetic inputs that disturb the vines and cellars at all levels is essential to Chevrot, but they are looking to go even further.

They place the environment at the center of our concerns because they are convinced that a rich and healthy ecosystem is the guarantee of healthy grapes, with a complex and deep taste, balanced for the most natural vinification possible.
