In the cellar, the approach is one of precision and respect for the fruit. White grapes are pressed whole-cluster, with gentle, prolonged press cycles to extract the purest and most expressive juices. Fermentation takes place in 350-liter barrels (30% new oak), followed by an unhurried élevage of 15 to 20 months—without bâtonnage—to allow the wines to develop complexity naturally. Bottling occurs without filtration, using natural corks, and each bottle is sealed with wax to ensure optimal aging and consistency across vintages.
